- Simple Lemon Vinaigrette 4-6 tbsp
- baby spinach or soft salad greens of choice 5 oz
- medium carrots 2
- small handful or cilantro leaves and tender stems Β½ cup
- Garlicky Crunch 5 tbsp

Not a fan of cilantro? Omit it. Storage: This salad is best fresh; make only as much as you plan to eat. Nutrition boost: Top the salad with sliced cucumber, sliced radishes, or thinly sliced or shredded cabbage. For added protein, stir some defrosted or cooked edamame into the salad.

1Gather: Simple Lemon Vinaigrette , baby spinach or soft salad greens of choice , medium carrots , small handful or cilantro leaves and tender stems , Garlicky Crunch , Sea salt or kosher salt and freshly cracked black pepper.

2Take the Simple Lemon Vinaigrette out of the fridge. If it has solidified, set the jar in a shallow bowl of hot water to come back to room temperature. Shake the jar before using to re-emulsify.

3Finely chop the baby spinach. Or, add it to a large serving bowl and use scissors to βchopβ it in the bowl.

4Using a Y-shaped vegetable peeler, shave the carrots into ribbons. Once you get to the inner core, either thinly slice the carrots or save them for snacks. Or, use a julienne peeler or a box grater to shred the carrots.

5If using the cilantro, roughly chop it.

6In a large serving bowl, combine the chopped spinach, carrots, and cilantro (if using). Drizzle on 4 tbsp of the Simple Lemon Vinaigrette. Toss, then fold in the Garlicky Crunch. Season with salt and pepper to taste, and add more vinaigrette as desired.
