🥘 Ingredients
- large limes 2
- fresh ginger 1 ½ inch
- garlic cloves 2
- soy sauce or tamari 1 ½ tbsp
- agave nectar 2-3 tsp
- extra virgin olive oil 1 ½ tbsp
- Persian or English cucumbers about Persian or small English cucumbers 2 lb
- cilantro or flat-leaf parsley leaves and tender stems 1 handful

Storage: This salad is best fresh; only make as much as you’ll be able to eat. Nutrition boost: For more variety, mix in some thinly sliced scallions. For more protein, add in edamame. For a sweet spin, fold in sliced or cubed fresh mango or pineapple. Shortcut: If you skipped the Lime-Ginger Vinaigrette, dress the salad with a few dashes of Chinese black vinegar (or rice vinegar) plus a few drizzles of good-quality extra virgin olive oil and toasted sesame oil.

1Prepare: large limes , fresh ginger , garlic cloves , soy sauce or tamari , agave nectar , extra virgin olive oil .

2Use a microplane to zest the limes, then use it to grate the ginger and garlic. Juice the limes.

3In a jar for which you have a lid, combine 1 tbsp of lime zest, 4 tbsp of lime juice, the grated ginger and garlic, soy sauce, 2 tsp agave, and the olive oil. Seal the jar and shake it vigorously to emulsify. Taste, adding more agave for sweetness, more lime juice for tartness, or more olive oil for richness to balance the acidity.

4Seal the jar with its lid, label, and store in the fridge for about 1 week.

5Gather: 3-5 tbsp Lime-Ginger Vinaigrette (from meal prep), Persian or English cucumbers about Persian or small English cucumbers , cilantro or flat-leaf parsley leaves and tender stems , roasted , small ripe avocado or large , large red/orange/yellow bell pepper , Sea salt or kosher salt and freshly cracked black pepper.

6Take the Lime-Ginger Vinaigrette out of the fridge. If the oil has solidified, set the jar in a bowl of hot water to come to room temp. Shake well to re-emulsify.

7Slice the cucumbers into half moons (thinly, but not so thinly that they’ll wilt in the salad).

8Chop the cilantro or parsley. Roughly chop the cashews or peanuts. Slice the avocado thinly, cut into cubes, or tear into chunks with your hands.

9In a serving bowl, combine the cucumbers, bell pepper, and herbs. Add 3 tbsp Lime-Ginger Vinaigrette and toss to combine. Fold in the avocado and nuts. Taste, adding a pinch of salt or pepper or more vinaigrette as needed.
