Storage: This salad is best fresh; only make as much as you can eat. Nutrition boost: Opt for kale or arugula instead of mixed greens. For more veggies, add in thinly sliced radishes, shaved fennel, or grated cabbage. To make it more filling, fold in diced avocado, green or kalamata olives, or leftover whole grains.

1For the salad mix (from vegetable prep): of romaine lettuce , celery ribs , salad greens , Kosher or sea salt and freshly cracked black pepper, capers , Best -quality extra virgin olive oil, Best-quality red wine , Crispy Nutty Crumbles .

2If you didn’t make the Salad Mix during Vegetable Prep, prep the following now. Chop 1/2 large heads of romaine lettuce. Grab any celery leaves from your celery ribs. Thinly slice 1-2 celery ribs. Combine the romaine, celery leaves, and sliced celery to make the Salad Mix.

3Combine the Salad Mix and salad greens in a large serving bowl. Add the capers, if using.

4Drizzle the salad with olive oil and vinegar (about a 2:1 ratio), then sprinkle with a few pinches of salt and pepper. Toss with tongs or your hands. Garnish with the Crispy Nutty Crumbles. Taste, adding more salt or pepper as needed.
