Arugula Salad with Crunchy Protein Mix

- sweet-tart apple 1
- large carrot 1
- arugula 5 oz
- good-quality extra virgin olive oil 2 tbsp
- good-quality aged balsamic vinegar 1 tbsp
- Protein Crunch ΒΌ cup
- Medjool dates 2-4
- Kosher

For a sweet chew in every bite, use the larger amount of dates. Storage: This salad is best fresh; only make as much as you can eat. Nutrition boost: For more veggie action, top the salad with thinly sliced red onion, chopped cucumber, or shaved fennel. For added protein, sprinkle with hemp seeds or pepitas. Or, feel free to replace the arugula with protein greens. Shortcut: Use pitted dates to save some time.

1Gather: sweet-tart apple , large carrot , arugula , good-quality extra virgin olive oil , good-quality aged balsamic vinegar , Protein Crunch , Medjool dates , Kosher salt or sea salt and freshly cracked black pepper.

2Using a mandoline or sharp knife, slice the apple thinly (but not paper thin), removing the core.

3If you have a mandoline, use it to thinly slice the carrot. Or, use a Y-shaped peeler to shave the carrot into ribbons (once you get to the inner core, either thinly slice or save for a snack). Or, use a julienne peeler.

4Add the arugula to a large bowl. Toss with extra virgin olive oil and balsamic vinegar in about a 2:1 ratio until well-dressed to your liking.

5Add in the sliced apples, carrots, Protein Crunch, and chopped dates if using. Toss again, and season to taste with salt and pepper.
