- avocado oil or extra virgin olive oil 1 tbsp
- Easy Marinated Tempeh Bacon 1
- Flaky sea salt
- everything bagels or your bagel/bread of choice 4
- Chive Tofu Schmear 1 cup
- Persian cucumbers 3-4
- microgreens or baby arugula 2 oz
- Thinly
- Lettuce
- Chopped

Storage: Store all components separately in the fridge. For the best texture, reheat the tempeh bacon in a nonstick pan with a touch of oil until crispy again. Slice the cucumber, toast your bagel, and assemble as listed in the last step right before serving.

1Gather: avocado oil or extra virgin olive oil , Easy Marinated Tempeh Bacon , Flaky sea salt , everything bagels or your bagel/bread of choice , Chive Tofu Schmear , Persian cucumbers , microgreens or baby arugula . For the optional toppings:: Thinly sliced red onions, Lettuce /sprouts, Chopped fresh chives.

2Cook the tempeh bacon. Heat a large nonstick frying pan over medium-high with the oil for 2 minutes or until shimmering. Reduce the heat to medium and carefully add the tempeh, leaving behind excess marinade. NOTE: If you sliced the tempeh very thinly, youβll likely need to cook this in multiple batches.

3Cook for 3-4 minutes , until browned and crisp on the bottom. Use a pastry brush to brush some excess marinade on top, then flip the tempeh.

4Cook on the second side for 2-4 minutes until browned and crisp, brushing more marinade on top in the last minute. Remove from the heat and, if desired, sprinkle the tempeh with a pinch of flaky salt.

5While the tempeh cooks, slice the bagels in half and toast them using your preferred method until golden and crisp.

6Assemble. Spread a generous layer of Chive Tofu Schmear on the bottom half of each toasted bagel. Layer some cucumbers on top, followed by a handful of microgreens (or arugula). Top with a portion of the crispy tempeh bacon. Add any optional toppings, if using. Place the top half of the bagel on the sandwich and cut in half with a serrated knife (or keep whole!).
