- large 12
- unsweetened peanut butter 4-6 tbsp
- roasted peanuts 2 tbsp
- Flaky
- 65 to 80% dark chocolate 3-4 oz

Storage: Freeze any leftover dates in a sealed jar or freezer-safe bag for several weeks.

1Gather: large , unsweetened peanut butter , roasted peanuts , Flaky sea salt, 65 to 80% dark chocolate .

2Line a large plate with parchment paper.

3Slice open each date and remove the pit. Spoon some peanut butter into each date cavity ( timer to 1 ½ teaspoons for each date). Sprinkle a tiny bit of finely chopped peanuts on top followed by a pinch of flaky sea salt.

4Transfer the dates to the plate and freeze for at least 20 minutes (or longer).

5Before serving, melt the chocolate using either a double boiler (best for chocolate chips) or microwave (best for chocolate bars). Double boiler: Grab a heatproof bowl that can be nestled into a saucepan—it should hover above the bottom of the saucepan. Fill the saucepan with a few inches ( timer cm) of water—not so much that the water touches the bottom of the bowl. Heat the water on the stove and keep at a rapid simmer. Place the chocolate in the bowl and whisk frequently until melted, making sure that no water comes near the chocolate. Microwave: Add the chopped chocolate to a microwave-safe bowl. Microwave on high power for 30 seconds , then stir. Repeat, heating in 30-second intervals, stirring after each interval, until melted.

6Remove the dates from the freezer. Use a fork to dip one stuffed date in the melted chocolate, and transfer back to the parchment paper-lined plate. Immediately sprinkle the date with a pinch of flaky salt and a bit of crushed peanuts.

7Repeat this process with each date, then return the dates to the freezer for at least 5 minutes before enjoying.
