Halal Cart-Style Soy Curl Bowls

- dried soy curls 6 oz
- soy sauce or tamari 1 tbsp
- cornstarch 3 tbsp
- avocado oil or other neutral-flavored oil 1 ½ tbsp
- vegan butter 1 ½ tbsp
- Cooked White Rice 3 ½ cup
- flat-leaf parsley or cilantro 1 cup
- ripe tomatoes 0.75-0.88 lb
- small red onions ½
- fat garlic clove 1
- ground turmeric ½ tsp
- kosher salt ½ tsp
- vegan butter or neutral-flavored oil 1 ½ tsp
- medium lemons ½

- Really Good White Sauce 10 tbsp
- Hot sauce
Soy Curl Spices
Adding vegan butter helps bloom the spices and gives the soy curls a juicier, more flavorful finish that mimics the richness of traditional halal cart-style meat. If you prefer not to use butter, use avocado or olive oil to bloom the spices. To see me cook soy curls, watch this YouTube video, or read more about soy curls in this blog post. Storage: Store the soy curls, Turmeric Rice, and sauce separately in the fridge for 3 to 4 days. Reheat the rice as listed in step 7(a). To crisp up the soy curls, add to a nonstick pan with a touch of oil, tossing frequently for a few minutes. Prep the Veggies as listed in step 4(a) and make the tomato salad per step 7(b). Assemble as listed in the last step right before serving. Nutrition boost: For more fiber, use brown rice instead of white rice. For more veggies, top your bowl with broccoli sprouts or shredded, massaged kale or chopped romaine. Shortcut: If you bought cherry/grape tomatoes, simply chop in half instead of making the tomato salad in step 7(b).

1Prepare: ground cumin , smoked paprika , ground coriander , A generous amount of freshly cracked black pepper.

2Add all the ingredients to a small ziploc bag, seal, and shake to combine. Or, add all the ingredients to a small bowl, stir well, and transfer to a container.

3Label and store on the counter or in your pantry for up to 6 months.

4For the spiced soy curls: water , 1 tbsp Better Than Bouillon No Chicken Base, dried soy curls , soy sauce or tamari , cornstarch , avocado oil or other neutral-flavored oil , vegan butter , Soy Curl Spices ( timer tbsp) (from meal prep). For the turmeric rice and veggies: Cooked White Rice , flat-leaf parsley or cilantro , ripe tomatoes , small red onions , fat garlic clove , ground turmeric , kosher salt , vegan butter or neutral-flavored oil , medium lemons , Kosher salt and freshly cracked black pepper, Really Good White Sauce , Hot sauce .

5Take the Cooked White Rice out of the fridge.

6Heat 3 cup water and Better Than Bouillon in a medium saucepan until barely simmering, whisking to dissolve the bouillon. Or, heat in the microwave until very warm.

7Soak the soy curls (see Note 2). If there are a lot of dusty soy curl crumbs, strain those in a fine-mesh sieve, then discard. Add the soy curls to the hot broth and push down to submerge. Remove the pan from the burner. Soak for 10 minutes . Drain the soy curls and spread them out on a large plate to cool off for a few minutes.

8While they soak, prep the remaining soy curls ingredients and the Veggies. Chop the parsley or cilantro. Cut the tomatoes into bite-sized wedges. Thinly slice the red onion. Grate or finely mince the garlic, if using. TIP: If saving leftovers, only prep as many Veggies as you’ll eat today.

9Prep the soy curls. Once the soy curls are no longer super hot, take one handful and cup them between both hands. Positioned over the sink or a bowl, give one firm and long squeeze until the broth goes from a steady stream to droplets. Set aside on a cutting board and repeat. You should have squeezed out a fair amount of liquid ( timer 1/3 cup). Cut any thicker soy curls lengthwise, aiming for timer inch (6 mm) thickness. Add the soy curls to a bowl (or add them to the pot used earlier but wipe it dry first). Toss the soy curls with 1/2 tbsp soy sauce until coated, then add the remaining 1/2 tbsp soy sauce. Add the cornstarch and toss until well-coated.

10Pan-fry the soy curls. Heat a large nonstick frying pan over medium heat for 2 minutes . Add the avocado oil, and once shimmering, add the soy curls and spread out as evenly as possible. Cook for about 10 minutes, stirring every 90 seconds to 2 minutes, or until browned and crisp on the edges. Add the butter to the middle of the pan and allow it to start melting. Add the Soy Curls Spices. Toss to coat well and cook for 30 seconds to 1 minute to let the spices bloom. Remove from the heat to prevent burning.

11While the soy curls cook, prepare the other components. Turmeric Rice: In a large microwave-safe bowl, add the Cooked White Rice with a few ice cubes on top, cover, and heat in the microwave until hot. Remove the ice cubes, and stir in the turmeric, 1/2 tsp kosher salt, and if desired, 1 1/2 tsp butter (or neutral-flavored oil). Stir well to coat the rice. Stir in most of the parsley/cilantro. Taste, adding more salt or turmeric as desired. Tomato salad: In a bowl, combine the tomatoes, red onion, garlic if using, remaining parsley, a few squeezes of lemon, and a drizzle of olive oil. Season with salt and pepper to taste.

12In each bowl or plate, layer the Turmeric Rice, Spiced Soy Curls, and tomato salad. Drizzle with the Really Good White Sauce and hot sauce (if using).
