Crispy Tofu & Lentil Wraps with Yogurt Sauce

🥘 Ingredients
- Cooked Lentils 1 ¼ cup
- extra-firm tofu 1
- Kosher
- extra virgin olive oil 3 tbsp
- garlic cloves 4
- Aleppo pepper or red pepper flakes ½ tsp
- za'atar 2-3 tsp
- arugula 3 oz
- Freshly
- Garlicky Yogurt Sauce 0.67 cup
- lavash flatbreads or other large wraps or pita breads 4
- A few handfuls of fresh and/or jarred juicy/tangy vegetables e.g., English cucumber, jarred peppers
- medium or large ripe avocado 1
If you didn’t buy za'atar, make this substitute. See the za'atar grocery note on your grocery list for whether you need to scale the recipe. If your yogurt is on the thin side or not very rich, you may want to mix 1-2 tbsp of vegan mayo into the Garlicky Yogurt Sauce so it spreads well on the wraps and isn’t runny. Storage: Store the lentils & greens and tofu separately in the fridge for 3 to 4 days. For the quickest leftovers, eat the tofu and lentils at room temp. Or if preferred, reheat the tofu in a nonstick frying pan with a touch of oil over medium heat for 3 to 4 minutes on each side until crispy. Reheat the lentils & greens in the microwave or on the stove until heated through. Chop your vegetable(s) of choice and avocado, then assemble as listed in the last step before serving. Nutrition boost: Use whole wheat lavash. For more veggies, layer your wraps with sliced cherry tomatoes, broccoli sprouts, thinly sliced red onion, or any leftover roasted vegetables you have in your fridge. For more protein, add some hemp seeds to the Garlicky Yogurt Sauce. Shortcut: Skip sautéing the lentils and just add them plain at room temperature.

1Gather: Cooked Lentils , extra-firm tofu , Kosher salt, extra virgin olive oil , garlic cloves , Aleppo pepper or red pepper flakes , za'atar , arugula , Freshly cracked black pepper, Garlicky Yogurt Sauce , lavash flatbreads or other large wraps or pita breads , A few handfuls of fresh and/or jarred juicy/tangy vegetables e.g., English cucumber, jarred peppers , medium or large ripe avocado .

2Take the Cooked Lentils out of the fridge to come to room temp.

3Prep the tofu. With a thin dish towel, gently press down on the tofu to remove some water. Starting on the shorter side of the block, slice the tofu crosswise into ⅓-inch (.75 cm) thick slabs, about 10 to 12 in a 12-ounce (340g) block. Gently press down on the slabs with a dry towel to get more water out, repeating a few times. Sprinkle the top side of the slabs with a few pinches of salt.

4Cook the tofu. Line a large plate with paper towels. Heat 2 tbsp of oil in a 12-inch (30 cm) nonstick frying pan over medium-high heat. Once shimmering, carefully add the tofu (salt side down). Sprinkle the tofu with a couple pinches of salt. Cook for 5-7 minutes until the bottoms are golden brown, gently moving the slabs in the pan as needed to coat evenly in the oil. Using a thin spatula or small offset spatula, flip the tofu and cook for 4 to 5 minutes on the other side, until golden brown. Transfer the tofu to the paper towel-lined surface.

5While the tofu cooks, prepare your side salad (if you’re making one) and prep the lentils. In another frying pan or sauté pan (whatever size you have), heat the remaining 1 tbsp of oil over medium heat. Once warm, add the garlic. Cook for 3 minutes or until just getting some color, stirring occasionally. Add the chili flakes and za'atar, if using, and stir frequently for 30 seconds. Add the Cooked Lentils and toss to coat, cooking for a few minutes or until warmed through. Add in the arugula and stir frequently, just briefly cooking to soften (not fully wilt). Take off the heat, and season with salt and pepper to taste.

6Assemble: Slather some Garlicky Yogurt Sauce ( timer shy tablespoons) onto each flatbread, keeping an empty border. Tear the tofu into smaller pieces and scatter on top. Spoon the lentils & greens on top of each flatbread, then layer on your sliced vegetables and avocado. Roll up the flatbreads either in foil to prevent spillage, or secure them with a toothpick. Serve with your side salad, if you made one.
