Spiced Vanilla Chia Pudding

🥘 Ingredients
- raw cashews ½ cup
- chia seeds ½ cup
- soy milk or plant milk of choice 2 cup
- ground cinnamon 1 tsp
- ground ginger ½ tsp
- freshly grated nutmeg ½ tsp
- ground cardamom 0.25-0.5 tsp
- ground cloves ¼ tsp
- sea salt ¼ tsp
- pure maple syrup 2 tbsp
- pure vanilla extract 1 ½ tsp
- A few pinches of orange zest
- almond butter or nut butter of choice or roasted nuts/seeds of choice ½ cup
- of blueberries or fruit of choice 1 handful

Storage: Refrigerate chia pudding in a sealed jar or airtight container (or divide between small, sealed jars). Refrigerate for up to 5 days. Top with desired toppings right before serving. Nutrition boost: For more protein, top your chia pudding with some roasted pepitas.

1Gather: raw cashews , chia seeds , soy milk or plant milk of choice , ground cinnamon , ground ginger , freshly grated nutmeg , ground cardamom , ground cloves , sea salt , pure maple syrup , pure vanilla extract , A few pinches of orange zest . For the topping options: almond butter or nut butter of choice or roasted nuts/seeds of choice , of blueberries or fruit of choice .

2Cover the cashews with boiling water and set aside.

3Mix together the chia seeds and milk in a large bowl and whisk very well. Rest for 2-3 minutes , then whisk again to remove clumps. Transfer to the fridge for 15 minutes.

4Drain the cashews and rinse with fresh water.

5Add the chia pudding to a high-powered blender along with the drained cashews, cinnamon, ginger, nutmeg, cardamom, cloves, salt, maple syrup, vanilla, and orange zest if using.

6Blend until all of the ingredients are thoroughly combined and the chia pudding is thick, creamy, and smooth, ensuring all the cashew bits have been pulverized. Taste, adding more sweetener, more of any of the spices, or more salt as desired.

7Divide between glasses or bowls and serve with nut butter and blueberries.
