High-Protein Chocolate Overnight Oats

🥘 Ingredients
- raw cacao powder or unsweetened cocoa powder ¼ cup
- pure maple syrup 1-2 tbsp
- high-protein plant-based yogurt 1 ½ cup
- soy milk 1 cup
- old-fashioned rolled oats 1 ½ cup
- chia seeds 3 tbsp
- ground cinnamon ½ tsp
- kosher salt ¼ tsp
- pure vanilla extract 1 tsp
- scoops chocolate plant-based protein powder 5-6 tbsp
- nut butter of choice 3 tbsp
- of raspberries or sliced strawberries 1 handful
Raw cacao powder has a slight bitterness to it, so if you’re new to this ingredient, you may want to stick with unsweetened cocoa powder. 1 tbsp will yield very lightly sweet oats. If you’re planning to stir in protein powder that has some sweetener, start with 1 tbsp maple syrup and add more to taste. If you prefer more liquidy oats, you may want to add more milk now (or stir in before serving). These amounts are for 3 servings and will add even more protein. See step 4 for the amounts to use when making just one serving. Storage: The overnight oats will stay good in the fridge for up to 5 days. Assemble as listed in step 4 right before enjoying. Nutrition boost: For more plants, mix ground flax seeds or hemp seeds into the oats.

2Heat up 1/4 cup of water until almost boiling, then add to a large bowl. Stir in the cocoa powder and maple syrup and whisk well until you have a smooth, lump-free paste or slurry. Let it cool for a few minutes.

3Add the yogurt and milk to the bowl, and whisk until well combined. Add the oats, chia seeds, cinnamon, salt, and vanilla. Whisk or stir until the oats are well incorporated and everything is evenly combined. If the mixture looks thick, add more milk.

4Store in a sealed large jar or container, or divide between three small sealed jars. Chill overnight (or for at least 1 hour) and store in the fridge for up to 5 days.

5When ready to serve, prep your toppings and add-ins (optional): If you are using protein powder, add ½ scoop (for one serving) to a bowl and drizzle in enough filtered water to make a thick and creamy slurry. Now add in your one serving of overnight oats and stir well to combine, adding more water as needed if it’s too thick. If desired, top each serving with timer tablespoon (16g) nut butter and/or fruit.
