🥘 Ingredients
- raw walnuts 18 tbsp
- cremini mushrooms or white button mushrooms 1 ½ cup
- kosher salt ¾ tsp
- Freshly
- soy sauce or tamari 2 tsp
- dried oregano 2 tsp
- onion powder ¾ tsp
- garlic powder ¾ tsp
- cayenne pepper 0.25-0.5 tsp
- extra virgin olive oil 1 tbsp

1Prepare: raw walnuts , cremini mushrooms or white button mushrooms , kosher salt , Freshly cracked black pepper, soy sauce or tamari , dried oregano , onion powder , garlic powder , cayenne pepper , extra virgin olive oil .

2Add a rack in the middle of the oven. Preheat the oven to 350ºF / 175ºC. Spread the walnuts out on a sheet pan. Toast in the oven for 7 minutes until nice and toasty.

3Add them to a food processor and blend just briefly until finely chopped (you don’t want walnut butter).

4Now add the roughly chopped mushrooms, salt, black pepper to taste, soy sauce, oregano, onion powder, garlic powder, and cayenne if using.

5Blend a few times, followed by several quick pulses, until the mixture is finely chopped but not smooth like pâté.

6Heat a large, deep sauté pan over medium to medium-high heat with the olive oil. Let it get nice and hot, then add your walnut-mushroom mix. Break it up with a wooden spoon or flat-ended spatula into pieces, as small as you can. Cook for 4-7 minutes , until slightly crispy and browned in spots.

7When done, return to step 5 of the Hearty Sausage Pasta recipe.
