- extra-firm tofu 1
- boiling water 2 cup
- kosher salt or sea salt ½ tbsp

If you bought 2 packs of tofu, use 4 cup of boiling water and 2 tbsp kosher salt (or 1 tbsp sea salt). If you’re thinking, “Wait, I’m not going to press the tofu?” and wondering why we’re adding saltwater to the tofu instead, see my YouTube video for why a saltwater soak makes for more flavorful tofu.

1Prepare: extra-firm tofu , boiling water , kosher salt or sea salt .

2Slice the tofu into ½-inch (1.3 cm) cubes. Add to a medium bowl.

3In a heatproof glass or jar, combine the boiling water and salt. Stir to dissolve, then pour the hot saltwater over the tofu. Soak the tofu for 10 minutes . Meanwhile, work on other prep.

4Drain the tofu in a colander and gently shake it to release excess water. Spread the tofu out on a clean dish towel and gently pat dry (or let it rest for 5-10 minutes to dry a bit).

5Refrigerate for up to 5 days.
