- vegetable broth or water ¼ cup
- hoisin sauce 2 ½ tbsp
- Shaoxing wine 2 ½ tbsp
- soy sauce or tamari 2 tbsp
- rice vinegar 2 tbsp
- organic brown sugar 1.33 tbsp
- chili-garlic sauce or sambal oelek 1-2 tbsp

AKA Chinese cooking wine. If you don’t have this, sub with mirin or dry cooking sherry (or rice vinegar). If using mirin, start with 1 tbsp of brown sugar, as mirin is sweeter. I prefer brown sugar here, as it yields a slightly thicker sauce, but if you want to use maple syrup or agave, that’s fine.

1Prepare: vegetable broth or water , hoisin sauce , Shaoxing wine , soy sauce or tamari , rice vinegar , organic brown sugar , chili-garlic sauce or sambal oelek .

2Add all of the ingredients to a jar for which you have a lid. Seal the jar and shake it well to combine. Taste, adding more Shaoxing wine for acidity, more chili-garlic sauce for heat, or more hoisin sauce for sweet-umami flavors.

3Label and store in a sealed jar in the fridge for 5 to 7 days.
