If using a nonstick pan, use less olive oil, about 1 tbsp.

1Prepare: extra virgin olive oil , pepitas , panko breadcrumbs , Kosher salt, garlic powder , red pepper flakes , dried oregano , medium lemon , Flaky sea salt.

2Line a large plate or a sheet pan with parchment paper. Heat the oil in a large frying pan over medium heat. Once warm, add the pepitas and cook, stirring occasionally, for 2-3 minutes , until golden and popping a bit.

3Add the panko and season with a bit of kosher salt. Cook for 1 ½ to 2 minutes, or until starting to turn golden, stirring very frequently.

4Add the garlic powder, red pepper flakes, oregano, and lemon zest, and cook for 30-60 seconds , stirring constantly, or until the panko is golden brown and the pepitas are golden brown in spots. Transfer to the lined sheet pan and sprinkle with a bit of flaky salt.

5Once cool, use the parchment paper to funnel the mixture into a jar for which you have a lid. Seal the jar, label it, and store in the pantry for 3 to 4 weeks.
