1Prepare: medium yellow onions , extra virgin olive oil , A pinch of kosher salt, garlic cloves , small red bell peppers .

2Peel and dice the onions. Shortcut option: roughly chop the onions and pulse them in a food processor until finely chopped (or use a vegetable chopper).

3Heat the olive oil in a Dutch oven or large, deep sauté pan over medium-high heat. Once shimmering, add the onions and season with the salt. Cook until golden brown, 10 to 12 minutes, stirring occasionally. Add a splash of water as needed to deglaze the pan and scrape up any browned bits. While the onions cook, finely chop the garlic. Shortcut option: add the garlic to a food processor or mini chopper and pulse until finely chopped. While the onions cook, chop the bell peppers.

4Once the onion is golden brown, add the bell peppers and garlic. Cook for about 5 minutes , or until the peppers soften, stirring frequently and adding a splash of water as needed to prevent burning. Take off the heat. Once cool, label and store in an airtight container in the fridge for about 4 days.
