- hemp seeds/hearts 1 ¼ cup
- large limes 2
- Heaping water 0.33 cup
- extra virgin olive oil 2 ½ tbsp
- Thai green curry paste 1.5-2.5 tbsp
- fresh basil or Thai basil leaves ¾ cup
- Heaping cilantro leaves and tender stems ½ cup
- garlic cloves 4
- agave nectar or pure maple syrup 2 ½ tsp
- kosher salt ½ tsp

For milder heat, use the lower amount of Thai green curry paste. Not a fan of cilantro? Use more basil (or Thai basil if you have it) or replace the cilantro with fresh mint.

1Prepare: hemp seeds/hearts , large limes , Heaping water , extra virgin olive oil , Thai green curry paste , fresh basil or Thai basil leaves , Heaping cilantro leaves and tender stems , garlic cloves , agave nectar or pure maple syrup , kosher salt .

2In a high-powered blender or food processor, add the hemp seeds, 5 tbsp lime juice, and the water. Blend until the mixture comes together. If there isn’t enough liquid to blend, add another splash of water.

3Add the remaining ingredients. Blend until smooth and creamy, scraping down the sides as you go. If it’s too thick to blend, add a splash of water. Taste, adding more lime juice for tartness, more agave for sweetness to balance, or more salt as needed.

4Label and store the dressing in a sealed jar or airtight container in the fridge for about 5 days.
