- extra virgin olive oil 1 tbsp
- raw almonds or hazelnuts ¼ cup
- pepitas ¼ cup
- panko breadcrumbs ½ cup
- fennel seeds 2 tsp
- flaky sea salt ½ tsp

If you don’t have fennel seeds, you can skip them entirely, or use 1-2 tsp of coriander seeds, roughly crushed.

1Prepare: extra virgin olive oil , raw almonds or hazelnuts , pepitas , panko breadcrumbs , fennel seeds , flaky sea salt .

2Line a plate or cutting board with parchment paper. Heat a large frying pan or sauté pan over medium heat. Once warm but not hot, add the olive oil, roughly chopped nuts, and pepitas. Cook, stirring frequently, until the nuts/seeds start to brown, 3 to 4 minutes.

3Add the panko, fennel seeds, and salt. Stir very frequently until the panko is golden brown, 1 ½ to 3 minutes.

4Transfer to the parchment paper and spread out. Once cool, use the paper to funnel the mixture into a jar. Seal the jar, label it, and store in the pantry for several weeks.
