1Prepare: extra-firm tofu .

2If you froze the tofu you bought at the grocery store, here’s how to defrost it: Option 1 (takes timer to 24 hours): Thaw the tofu in the fridge. You can speed the thawing process up significantly by placing the tofu on an aluminum sheet pan outside the fridge for up to 2 hours (don't leave tofu at room temp for more than 2 hours for food safety reasons). Option 2 (takes timer minutes): Boil in a saucepan. Bring a saucepan of water to a boil. If you froze the tofu inside its packaging, run it under warm water until you can remove the tofu from the packaging. Add the tofu to the boiling water and boil until thawed, 10 to 15 minutes. Poke the middle of the tofu with a fork to check if it’s fully defrosted. Drain, then pat dry with a clean dish towel. Option 3 (takes timer minutes): Heat in the microwave. If you froze the tofu inside its packaging, run it under warm water until you can remove the tofu from the packaging. Add the tofu to a shallow bowl (if you froze the tofu in a microwave-safe container, keep it in there). Microwave on high in 60- to 90-second intervals until you don’t feel any ice left inside the tofu. Once your tofu is defrosted, move onto your next prep step for the tofu.
