Cook black Beluga lentils the same as French green lentils. Green or brown lentils will take less time to cook, about 10 to 12 minutes. If you bought pre-cooked lentils, skip this component.

1Prepare: French green lentils , Kosher salt and freshly cracked black pepper, bay leaf .

2Fill a medium saucepan ½ or ⅔ full of water. Bring to a boil. Once boiling, season generously with salt, then add the lentils, bay leaf, and several cracks of pepper. Reduce the heat to a decent simmer and cook for 17-20 minutes , or until the lentils are al dente—cooked through but with a bite.

3Drain the lentils, but do not rinse. Discard the bay leaf. Once cool, store in a labeled airtight container in the fridge for about 5 days.
