1Prepare: farro , kosher salt , Freshly cracked black pepper.

2Fill a medium saucepan half full with water and bring to a boil.

3Once boiling, add the farro, salt, and a generous amount of pepper. Reduce to a simmer and cook uncovered until al dente—tender yet chewy, 15 to 20 minutes for pearled farro. (For semi-pearled farro, 20 to 30 minutes.) Drain the farro in a colander.

4If you have time, spread the farro out on a sheet pan or silpat mat for 15 minutes to prevent mushiness.

5Once cooled, label and store in an airtight container in the fridge for about 5 days.
