Cooked Beans from Scratch

🥘 Ingredients
- dried beans of choice 8 oz
- water or bean soaking liquid, or vegetable broth, or a mix 3 cup
- Diamond Crystal kosher salt
- Freshly

1Prepare: dried beans of choice , water or bean soaking liquid, or vegetable broth, or a mix , Diamond Crystal kosher salt , Freshly cracked black pepper to taste, Aromatics of choice such as bay leaf , Extra virgin olive oil .
Stovetop Instructions

1In a medium saucepan, add the beans, water/broth, 1/2 tsp salt (see Note 1), black pepper, and aromatics.

2Partially cover the pan and bring to a boil. Skim off big bubbles of foam with a spoon. Boil for 10 minutes .

3Reduce the heat to the lowest level to maintain an occasional simmering bubble. Simmer at this level until the beans are cooked, occasionally checking to ensure it’s not simmering too rapidly. You can either simmer: Uncovered: You get a richer bean broth, but you may need to refill with boiled water. Covered: The liquid doesn’t evaporate much, so the broth isn’t as rich, but there’s less babysitting involved.

4After 40 to 60 minutes, sample a bean to see how tender it is. For small-sized beans and very fresh beans: These may be done after slowly simmering for 40-60 minutes . For large-sized beans and conventionally grown beans: These will take longer to cook, about 1 ½ hours of slow simmering, even longer if unsoaked.

5When the beans are almost done, season with a bit more salt. Continue simmering until the beans are tender. Now, season with more salt to taste. If desired, drizzle with a glug of olive oil for richness.

6Allow to cool, then store beans in their broth in labeled airtight containers in the fridge for up to 5 days (or refrigerate/freeze broth separately). To freeze, divide into portions (I love using Souper Cubes!) and freeze for 3 to 6 months. TIP: Store timer oz (260g) beans per container. This is the same amount found in a 15-ounce (425g) can once drained.
Instant Pot Instructions
Use less salt if using vegetable broth or bean soaking liquid; use half the amount if using sea salt. For more flavor, add some aromatics to your cooking water, such as 1 bay leaf, 1 1/2 smashed garlic clove, 1/4 onion, 1 shallot, chopped carrot or celery, a bundle of woodsy fresh herbs (e.g., a Bouquet Garni (With Sage or Rosemary)), 1 1/2 dried chile pepper cracked in half, or dried or fresh mushrooms. Instant Pot cook times: Black beans: 22 to 25 minutes (unsoaked); 8 to 10 minutes (soaked) Butter beans (lima beans): 12 to 14 minutes (unsoaked); 8 to 10 minutes (soaked) Cannellini (white kidney): 35 to 40 minutes (unsoaked); 7 to 9 minutes (soaked) Chickpeas (garbanzo beans): 35 to 40 minutes (unsoaked); 10 to 15 minutes (soaked) Great northern: 25 to 30 minutes (unsoaked); 8 to 10 minutes (soaked) Kidney beans: 30 minutes (unsoaked); 8 to 12 minutes (soaked) Navy beans: 20 to 25 minutes (unsoaked); 8 to 12 minutes (soaked) Pinto beans: 30 minutes (unsoaked); 7 to 10 minutes (soaked) This method relies on the Rancho Gordo method for cooking beans! 1In the Instant Pot, add the beans, water/broth, 1 1/4 tsp salt (see Note 2), black pepper, and aromatics. To prevent lots of foaming, don’t fill the Instant Pot more than halfway when cooking beans.

2Secure the lid. Use the Pressure Cook setting at high pressure. Select the cook time based on the type of bean and if they're soaked (see Note 3). After the timer goes off, allow a natural pressure release for 10-15 minutes , then manually release any remaining steam. (To avoid bean splatter getting everywhere, don’t perform a quick release.)
