  • Freshly
  • hemp seeds or raw cashews 1 cup
  • lime juice 6 tbsp
  • cilantro leaves leaves only; stems can be bitter here 1 cup
  • ground cumin ½ tsp
  • garlic cloves 3
  • jalapeño pepper 1
  • nutritional yeast 2 tbsp
  • extra virgin olive oil 1 tbsp

Not a fan of cilantro? You can use flat-leaf parsley here (make sure to omit the thick stems).

    Prepare: Freshly boiled water, hemp seeds or raw cashews , lime juice , cilantro leaves leaves only; stems can be bitter here , ground cumin , garlic cloves , jalapeño pepper , nutritional yeast , extra virgin olive oil , Kosher salt and freshly cracked black pepper.

    Pour freshly boiled water over the hemp seeds, and soak for at least 10 minutes. Rinse and drain the hemp seeds well.

    In a high-powered blender, add the lime juice, cilantro leaves, cumin, garlic, jalapeño (if using), nutritional yeast, olive oil, 3/4 tsp kosher salt, and pepper to taste. Once the hemp seeds are done, add to the blender. Blend until smooth and creamy, scraping down the sides as you go. You may need to add 2 tbsp of water if you don’t have a high-powered blender. Taste, adding more lime juice for tang, more nutritional yeast for savoriness, more olive oil for richness, or more salt as needed.

    Store in a sealed, labeled jar in the fridge for up to 5 days.
