🥘 Ingredients
- raw cashews ½ cup
- water ¼ cup
- white miso 1 tbsp
- nutritional yeast 3 ½ tbsp
- lemon juice 3 tbsp
- capers 2 tbsp
- caper brine 1 tbsp
- extra virgin olive oil 1 tbsp
- vegan Worcestershire sauce 1 ½ tbsp
- Dijon mustard ½ tsp
- onion powder ¾ tsp
- kosher salt ½ tsp
- Freshly
- roasted nori sheet 1
📝
Use leftover vegan Worcestershire sauce to make my BBQ Sauce, Vegan Lentil Shepherd's Pie, or Creamy Vegan Mushroom Stroganoff. The nori helps replicate the traditional flavor of Caesar dressing, which contains anchovies. If you don’t have it or won’t want to add that flavor, just skip it.

1Prepare: raw cashews , water , white miso , nutritional yeast , lemon juice , capers , caper brine , extra virgin olive oil , vegan Worcestershire sauce , Dijon mustard , onion powder , kosher salt , Freshly cracked black pepper to taste, roasted nori sheet .
-
2Soak the cashews in boiling water for 15 minutes (or boil for 15 minutes if you don’t have a high-powered blender).
-
3While the cashews soak, add all of the other ingredients (except the nori) to a small-capacity blender.
-
4Once the cashews are done soaking, drain and rinse, then add to the blender. Blend until smooth and creamy. Taste, adding more caper brine or lemon juice for tang; more olive oil for silky richness; or season with salt as needed. If the dressing is too thick for your taste, add in a splash of water. Optional: If using the nori, crumble into small pieces; add to the blender and pulse a few times.

5Transfer to a jar, seal, label, and store in the fridge for up to 1 week.
