Simple 15-Minute Vegan French Toast with Berry Compote

🥘 Ingredients
- oat milk 1 ½ cup
- pure maple syrup 1 tbsp
- chickpea flour ¼ cup
- nutritional yeast 2 ½ tbsp
- ground cinnamon 1 tsp
- freshly grated nutmeg or ground nutmeg ¼ tsp
- kosher salt ½ tsp
- Coconut
- slices of crusty bread such as country white bread 8-10
- Pure
- Berry Compote or vegan whipped cream
- mixed berries of choice 1 ½ cup
- organic cane sugar 0.33 cup
- freshly squeezed orange juice 2 tbsp

1For the french toast ingredients: oat milk , pure maple syrup , chickpea flour , nutritional yeast , ground cinnamon , freshly grated nutmeg or ground nutmeg , kosher salt , Coconut oil or vegan butter for frying, slices of crusty bread such as country white bread . For the for serving:: Pure maple syrup, Berry Compote or vegan whipped cream . For the simple berry compote: mixed berries of choice , organic cane sugar , freshly squeezed orange juice .
French Toast Directions

1In a medium bowl, whisk together the oat milk, maple syrup, chickpea flour, nutritional yeast, cinnamon, nutmeg, and kosher salt. Transfer the mixture to a shallow dish or pie pan.

2Heat a large skillet over medium-low heat with some coconut oil or vegan butter.

3Dunk a slice of bread in the batter for a few seconds on each side, ensuring the bread is soaked. Then flip the bread and repeat.

4Once the skillet is hot, cook each slice of bread for 2 minutes or until golden brown, then flip and cook for another 1-2 minutes.

5Serve with pure maple syrup and, if desired, the Simple Berry Compote (instructions below). Or, you can add some vegan whipped cream on top!
Simple Berry Compote Directions

If you don’t have day-old bread, here’s how to quickly dry out your bread slices. Place your bread slices on a wire rack in the oven at 300°F / 150°C and bake for 6-8 minutes per side.

1Place the berries, sugar, and orange juice in a saucepan, and cook on medium-low heat for about 10-15 minutes , gently smashing down the berries as the mixture cooks. Allow the mixture to simmer for an additional 10 minutes until thick and jammy.

2You can prepare the compote in advance and store in the fridge.
