1Soak stale white bread in whole milk 10 min , then mash it to a smooth paste with a fork.

2Mix ground beef , ground pork , ground veal , grated pecorino , eggs , garlic , flat-leaf parsley , kosher salt and black pepper into @&( timer with your hands, and stop the moment it comes together.
