- pumpkin 8 oz
- ground turmeric ½ tsp
- water 4 cup
- lamb shoulder 2 lb
- ghee 3 Tbs
- onion-tomato masala 1 ½ cup
- ground cumin 2 tsp
- ground coriander 1 Tbs
- Kashmiri chile powder 2 tsp
- garam masala 1 tsp
- water 1 cup
- kosher salt 2 tsp
- tamarind concentrate 1 Tbs
- jaggery 2 tsp
- kasuri methi 1 tsp
- cilantro ¼ cup

1Simmer toor dal , pumpkin , ground turmeric and water in a pot 40 min , then beat the lot to a rough purée with a whisk.

2Sear lamb shoulder in ghee in a heavy pot 8 min , in two batches.

3Fry onion-tomato masala , ground cumin , ground coriander , Kashmiri chile powder and garam masala into @&( timer 4 min .

4Braise @&( timer with water and kosher salt covered 60 min .

5Beat @&( timer into @&( timer with tamarind concentrate , jaggery , kasuri methi and cilantro , and 10 min , adding water if it stops moving in the pot.

6The lentils are the dish and not a thickener. Sweet sour and hot arrive at once: jaggery and tamarind together.
