- dried guajillo chiles 6
- dried ancho chiles 3
- white onion 1 large
- garlic 5 cloves
- cider vinegar 3 Tbs
- ground cumin 1 tsp
- Mexican oregano 1 tsp
- cinnamon stick 1
- whole cloves 4
- bay leaves 2
- black peppercorns 1 tsp
- water 4 cup
- beef chuck 3 lb
- beef short ribs 1 lb
- kosher salt 1 Tbs

1The liquid is the consomé. Four cups go in and four cups are meant to come out.

2Toast dried guajillo chiles , dried ancho chiles dry on sauté in an Instant Pot for 4 min , until they smell of raisins and before they smell of ash.

3Blend @&( timer with white onion , garlic , cider vinegar , ground cumin , Mexican oregano , cinnamon stick , whole cloves , bay leaves , black peppercorns , water , then strain it through a fine-mesh sieve — grit and skin left in the sieve are what make a consomé gritty.

4Season beef chuck , beef short ribs with kosher salt .

5Pressure cook @&( timer under @&( timer , lid on and valve sealed: 15 min , then 45 min on high and 15 min .

6Shred @&( timer in the pot, lift the meat out and skim the fat into a cup. The tortillas are dipped in that fat; the liquid under it is the consomé.
