- fresh ginger 2 slices

- kosher salt ½ tsp
- baby bok choy 4 heads

1Mix ground pork with raw shrimp , light soy sauce , Shaoxing wine , toasted sesame oil , fresh ginger , scallions , and white pepper , stirring in one direction until it turns sticky and holds together, then 20 min .

2Wrap a scant teaspoon of @&( timer in each of wonton wrappers , wetting two edges and pinching out the air.

3Boil @&( timer in a wide pot of water, in two batches, for 4 min — they are done when they float and the wrapper goes translucent at the seam.

4Simmer chicken stock with fresh ginger , light soy sauce , and kosher salt for 10 min .
