- yellow mustard 1 Tbs
- dark brown sugar 3 Tbs
- smoked paprika 2 Tbs

- unsalted butter 4 Tbs
- dark brown sugar ¼ cup
- honey 2 Tbs
- cider vinegar 2 Tbs
- barbecue sauce ½ cup

1Bring the smoker to 250°F (120°C) over hickory and hold it there.

2Pull the membrane off the bone side of pork spare ribs and rub them with yellow mustard , dark brown sugar , smoked paprika , kosher salt , coarse black pepper , garlic powder , and cayenne .

3Smoke @&( timer bone side down for 3 hr , until the meat has pulled back from the tips of the bones.

4Wrap @&( timer in foil with unsalted butter , dark brown sugar , honey , and cider vinegar , and cook them back for 2 hr .

5Unwrap @&( timer , brush them with barbecue sauce for wet ribs or dust them with more rub for dry, and set the finish in the smoke for 45 min .
