- extra-virgin olive oil 3 Tbs
- garlic 1 clove
- parmesan ¼ cup
- parmesan 2 oz
- black pepper ½ tsp
- caesar dressing ½ cup

1Preheat the oven to 400°F (200°C).

2Rub lacinato kale with kosher salt and extra-virgin olive oil in a wide bowl for 2 min , squeezing it by the handful until the ribbons darken, soften and lose about a third of their volume.

3Toast day-old sourdough with extra-virgin olive oil , garlic and parmesan on a sheet pan for 12 min , turning them once.

4Peel parmesan into wide sheets with a vegetable peeler over @&( timer , and grind black pepper over it.

5Toss @&( timer with caesar dressing and @&( timer , then let it stand five minutes before it goes out.

6Five minutes of standing is not a garnish detail: the croutons need that long to stop being dry bread.
