1Fry day-old pita bread in olive oil in a skillet over medium heat 4 min , turning constantly, until every piece is brittle and deep gold, then drain them on paper.

2Whisk lemon juice , ground sumac , pomegranate molasses , garlic , extra-virgin olive oil , kosher salt and black pepper together until it thickens slightly.

3Cut Persian cucumbers , ripe tomatoes , radishes , scallions and romaine heart into rough half-inch chunks and tear flat-leaf parsley and fresh mint in with them.

4Toss @&( timer with @&( timer and let them 5 min , so the sumac and salt pull a little juice out of the tomatoes and it joins the dressing.
