1Boil fresh egg noodles in a big pot of unsalted water for 3 min , drain them hard, and toss them with toasted sesame oil so they do not set into a block.

2Stir light soy sauce , dark soy sauce , oyster sauce , chicken stock , sugar , and white pepper together in a bowl.

3Stir-fry garlic and fresh ginger in peanut oil in a hot wok , then add napa cabbage , carrot , and scallions and cook 3 min , until the cabbage is limp but still has a bite.

4Add char siu to @&( timer and 1 min to warm it through.

5Toss @&( timer and @&( timer into @&( timer over the highest heat the hob gives, lifting with tongs for 2 min until every strand is brown and nothing pools in the pan.
