- baking soda ¼ tsp
- buttermilk 1 cup
- egg 1 large
- yellow onion ½ cup
- peanut oil 2 quarts
- flaky salt ½ tsp

1Whisk fine yellow cornmeal , all-purpose flour , granulated sugar , baking powder , kosher salt , and baking soda together in a bowl.

2Stir buttermilk , egg , and yellow onion into @&( timer until it is a batter thick enough to stand on a spoon.

3Let @&( timer 10 min so the cornmeal drinks and the soda starts to work.

4Heat peanut oil in a Dutch oven to 350°F (175°C).

5Drop @&( timer into @&( timer in rounded tablespoons, six or eight at a time, and 4 min , turning them as they bob up, until they are deep brown all round; drain them and salt with flaky salt .
