- garlic powder 1 tsp
- onion powder 1 tsp
- poultry seasoning 1 tsp
- paprika 1 tsp
- salt 1 pinch
- pepper 1 pinch
- chicken thighs 900 g
- onion 1 large
- olive oil 1 tbsp
- olive oil 1 tbsp
- mushrooms 4 medium
- carrot 1 medium
- potatoes 3 medium
- bell peppers 3 small
- corn starch 5 tsp
- chicken broth 5 cup
- dill 2 tbsp
- bay leaves 3 items

1Make your own chicken rub by combining garlic powder , onion powder , poultry seasoning , paprika , salt , and pepper .

2Pat dry the chicken thighs and rub the chicken pieces and let them absorb the flavor.

3Meanwhile, dice and brown onion in a deep pan with olive oil .

4Transfer to a baking dish.

5Turn heat to med-hi, add more olive oil , then add the thighs. Cook for 5-10 min on each side until brown.

6Add sliced mushrooms and carrot . Continue cooking for a few more minutes.

7Transfer to a baking dish.

8Add the potatoes and bell peppers to the pan. Dust with spices listed above. Cook for a few minutes. It doesn't have to be completely cooked since you will continue cooking in the oven.

9Transfer to a baking dish.

10Dissolve the corn starch in the chicken broth and add to the pan. Add the dill and bay leaves . Bring to boil and turn off the heat. Pour on top of the chicken and potatoes.

11Bake in the preheated 180C oven covered with foil for 40 min.

12Remove the foil and continue baking for another 20 min.
