Instructions

1Brown chicken thighs in dutch oven

2Once browned, remove chicken thighs and put on a plate for now

3Saute yellow onion , garlic , and jalapeño pepper for about 2 minutes (until softened)

4Dump in chicken broth , all the canned things ( corn , black beans , fire roasted tomatoes ), season with cumin, coriander, salt, chipotle chili powder , and put chicken thighs back in. Bring to simmer then simmer, covered, for 20-30 minutes

5Adjust season. Off heat, squeeze at least half a lime of juice, maybe a full one, I can't remember

6Top with avocado , cheese , and crushed tortilla chips ```
