Instructions

1Prepare syrup: Boil Water with Sugar and Honey for 15 minutes Stir in Lemon juice and remove from heat; set aside to cool

2Prepare phyllo: Melt Butter Preheat oven to 300°F

3Prepare baklava: Cover large cutting board with plastic wrap Unfold phyllo dough; smooth with hands Cut sheets crosswise using baking pan as guide to create two roughly equal stacks Cover with plastic wrap and damp kitchen towel

4Layer phyllo: Brush bottom of baking pan with melted butter Place one phyllo sheet; brush with butter Repeat with 7 more phyllo sheets, brushing each Sprinkle with 1 cup chopped walnuts Place one phyllo sheet on top; dab with butter Repeat with 5 more phyllo sheets, brushing each, staggering if needed Sprinkle with another cup of walnuts Repeat layering with additional 1 cup walnuts, 6 phyllo sheets Finish with 8 to 10 phyllo sheets from wider stack, using nicest sheets for top Brush all except final sheet with butter

5Cut and bake: Use bread knife to cut baklava into diamonds Rotate pan and complete cuts on both diagonals Bake 1 1/2 hours, rotating pan halfway through until golden and crisped

6Soak syrup: Immediately after removing from oven, pour cooled syrup over cut lines Drizzle remaining syrup over surface Cool to room temperature on wire rack, about 3 hours Cover with foil and let stand at least 8 hours before serving
