🥘 Ingredients
- dry orzo pasta 1 ½ cups
- kale 2 cups
- cherry tomatoes 12
- shallot 1
- olive oil ½ tsp
- garlic powder ¼ tsp
- salt and pepper
- lemon juice ½ lemon
- vegetable broth ¼ cup
- Parmesan cheese 1 ½ oz
- unsalted butter 3 tablespoons
🍳 Cookware
- medium pot
- wire-mesh strainer
- skillet

1Bring a medium pot of water to a boil. Add dry orzo pasta and cook until al dente, 7-9 minutes . Drain through a wire-mesh strainer and set aside.

2While orzo cooks, chop kale , halve or quarter cherry tomatoes , and mince shallot .

3Heat a skillet over medium heat with olive oil . Add minced shallot and stir often until tender, 4-6 minutes .

4Season with garlic powder and salt and pepper to taste. Add lemon juice and vegetable broth .

5Add the orzo and kale and mix well until kale wilts and some liquid is absorbed into the pasta.

6Stir in the tomatoes, Parmesan cheese , and unsalted butter . Season with a final pinch of salt and pepper.
