- cocoa powder ⅓ cup
- espresso powder 1½ tsp
- unsweetened chocolate 2 oz
- boiling water ½ cup plus 2 tbsp
- unsalted butter 4 tbsp
- vegetable oil ½ cup plus 2 tbsp
- eggs 2 large
- egg yolks 2
- vanilla extract 2 tsp
- granulated sugar 2½ cups
- all-purpose flour 1¾ cups
- bittersweet chocolate 4 oz

1Prepare a baking dish by lining with aluminum foil or parchment paper and greasing with cooking spray.

2In a large bowl , combine cocoa powder , espresso powder , unsweetened chocolate , and boiling water . Stir to combine and melt everything together.

3While still warm, add unsalted butter and stir until melted. Add vegetable oil and stir again.

4Once the mixture has cooled, add eggs and egg yolks and stir to combine.

5Add vanilla extract and whisk, then add granulated sugar and stir to combine.

6Add all-purpose flour and mix thoroughly, then add bittersweet chocolate and stir to combine one last time.

7Pour batter into prepared pan. Bake at 350°F for 30 minutes to 35 minutes , until a tester comes out clean-ish.

8Let brownies cool for 1 hour in the pan. Remove from pan using parchment or foil. Serve and enjoy.
