- water 4 Β½ cups
- coarse-ground polenta 1 cup
- table salt 1 teaspoon
- baking soda pinch
- unsalted butter 1 tablespoon
- Parmesan cheese 1 ounce

- medium saucepan

1Bring water to boil in medium saucepan over high heat.

2Whisk in coarse-ground polenta , table salt , and baking soda .

3Bring mixture to boil, stirring frequently.

4Reduce heat to lowest possible setting, cover, and cook for 5 minutes .

5Whisk until smooth; cover; and continue to cook until grains are tender but slightly al dente, about 25 minutes longer. (Polenta should be loose and barely hold its shape when drizzled from whisk ; it will continue to thicken as it cools.)

6Remove from heat, whisk in unsalted butter and Parmesan cheese , and season with salt and pepper to taste.
