Peanut Butter & Chocolate Oat Bites
No-bake wholegrain oat and peanut butter flapjack bites with mixed seeds and dark chocolate - a homemade take on the classic peanut butter & chocolate flapjack.

- peanut butter 150 g
- golden syrup 75 g
- butter 50 g
- light brown sugar 30 g
- rolled oats 200 g
- linseeds 20 g
- sunflower seeds 20 g
- pumpkin seeds 10 g
- roasted peanuts, chopped 30 g
- dark chocolate chips 40 g

- 20cm square tin

Store in an airtight container in the fridge for up to a week.

Swap the dark chocolate chips for milk or white chocolate if you prefer.

For extra protein, stir in a spoonful of soy or pea protein powder with the oats.

1Line a 20cm square tin with baking paper.

2Melt peanut butter , golden syrup and butter together in a saucepan over low heat, stirring, until smooth and runny.

3Take off the heat and stir in light brown sugar until dissolved.

4Add rolled oats , linseeds , sunflower seeds and pumpkin seeds to the pan and mix well until everything is fully coated.

5Stir in roasted peanuts, chopped and dark chocolate chips , saving a small handful of chocolate chips back if you'd like to scatter some on top.

6Tip the mixture into the lined tin and press down firmly and evenly with the back of a spoon or spatula.

7Scatter over the reserved chocolate chips, then chill in the fridge for at least 1 hour , or until firm.

8Turn out and cut into 12 bars or bites.
