Creamy harissa butter beans
These creamy harissa butter beans take no time at all. Cook fresh butter beans or use canned and whip up the sauce in a matter of minutes for a simple and hearty main that can be eaten with bread, or veggies, or grains.

🥘 Ingredients
- onion 1
- sun-dried tomatoes 6
- garlic 1 clove
- sun-dried tomato oil 2 tbsp
- olive oil
- salt
- harissa paste 1 tsp
- water 150 ml
- butter beans 450 g
- salt
- ground black pepper
- soya cooking cream 250 g
- fresh spinach 50 g

1Chop the onion and sun-dried tomatoes and grate the garlic .

2In a wide pan on medium heat, add the sun-dried tomato oil or olive oil and the onion along with a pinch of salt and sauté for 5 minutes until translucent.

3Then add the garlic and sun-dried tomatoes and sauté for 1 minutes before you add the harissa paste .

4Stir it in for a minute, then add the water bit by bit.

5Continue with the butter beans and a generous pinch of salt and ground black pepper and stir everything well to combine.

6Add the soya cooking cream and cook for 2 minutes .

7Lastly finish it with the fresh spinach and cook for a further 2 minutes until just wilted.
