- cauliflower 1 item
- olive oil 2 tbsp
- salt to taste
- black pepper to taste
- vegetable stock 1 L
- red lentils 500 g
- ginger 20 g
- garlic cloves 3 items
- curry powder 2 tsp
- coconut milk 400 ml
- coriander 50 g
- salt to taste
- black pepper to taste
- mango chutney 2 tbsp
- red chillies 2 items
- baby spinach 260 g

1Heat the oven to 200Β°C. Cut cauliflower into florets and place them on a baking tray. Drizzle with olive oil , salt , and black pepper . Roast for 15 minutes until golden.

2Pour vegetable stock into a large pan and bring to a boil. Rinse red lentils well and add them to the stock. Grate in ginger and garlic cloves . Add curry powder and simmer for 15 minutes until the lentils are soft.

3In a blender, combine coconut milk and coriander . Blitz until smooth, then stir into the lentil mixture. Season with salt and black pepper . Once the cauliflower is roasted, toss it with mango chutney .

4Finely slice red chillies . Stir baby spinach into the dal and top with the roasted cauliflower. Garnish with the sliced chillies, extra coriander, and a drizzle of coconut milk if desired.

5(optional) Serve with naan or rice for a heartier meal.
