- fava beans 750 g
- lard 30 g

- tomato purée 200 ml
- tomato 300 g

Add water if it starts to become too dry.

1Cut pork shoulder into chunks.

2Place the meat into a bowl, and season with garlic , paprika , bay leaf , salt , black pepper , and white wine . Mix together, cover, and leave to marinate in the refrigerator overnight.

3Place fava beans into a heatproof bowl and cover with boiling water.

4In the meantime, drain the pork meat while keeping the marinade for later.

5Place a pot over medium heat and melt lard in it.

6Add the marinated pork and cook until browned on all sides.

7Add onion to the pot, and cook on low until soft.

8Add tomato purée and the marinade, cover, and keep cooking on low, stirring occasionally until the meat is tender and cooked through.

9Drain the beans and remove the shells. Add them to the meat, and cook for 10 minutes , stirring the pot occasionally. Salt to taste.

10Finally, add tomato .

11Sprinkle with coriander leaves before serving.
