π₯ Ingredients
- cumin seeds 2 tsp
- chilli flakes large pinch
- olive oil 1 tbsp
- onion 1
- red split lentils 140g
- vegetable stock or water 850ml
- tomatoes 400g can
- chickpeas 200g can
- coriander small bunch
- Greek yogurt 4 tbsp

1Heat a large saucepan and dry-fry cumin seeds and a chilli flakes for 1 minute , or until they start to jump around the pan and release their aromas.

2Add olive oil and onion , and cook for 5 minutes .

3Stir in red split lentils , vegetable stock or water and a tomatoes , then bring to the boil. Simmer for 15 minutes until the lentils have softened.

4Whizz the soup with a stick blender or in a food processor until it is a rough purΓ©e, pour back into the pan and add a chickpeas .

5Heat gently, season well and stir in a coriander , reserving a few leaves to serve. Finish with Greek yogurt and extra coriander leaves.
