1Add thinly sliced chorizo to a pot and cook until slightly crispy and oils released into pan. Remove. Add thinly sliced bacon to a pot and cook until slightly crispy and oils released into pan. Remove.

2Heat olive oil in a large pot . Once hot, add onion and carrot and cook for 8 minutes , until soft. Season with salt . Reduce heat to medium, stir in tomato paste , garlic , and rosemary and cook 2 minutes , until the tomato paste turns brick red and garlic is aromatic.

3Add chorizo and bacon back into pot. Add white beans . Use a potato masher or fork to roughly mash beans. This helps them release starch, which will thicken the broth.

4Add chicken stock , kale , white beans , salt and pepper . Gently simmer soup with the lid slightly ajar for 20 minutes . If you prefer a brothier soup, add 1 cup of water or stock. Remove lid and stir in hard cheese and red wine vinegar . Serve with extra grated hard cheese .
