Mince pies
Paul Hollywood prefers melt-in-the-mouth pastry for his fruity mince pies, so this recipe is nice and short

π₯ Ingredients
- plain flour 375 g
- unsalted butter 260 g
- caster sugar 125 g
- egg 1
- mincemeat 1
- satsumas 2
- apple 1
- lemon 1
- mincemeat 1 Β½ tbsp

- caster sugar to taste
- icing sugar for dusting

Pastry

1Place plain flour and unsalted butter in a bowl and rub together to a crumb consistency.

2Add caster sugar and egg , and mix together.

3Tip out onto a lightly floured surface and fold until the pastry comes together, be careful not to over mix.

4Wrap the pastry in cling film and chill for 10 minutes .
Filling

1Scoop mincemeat into a bowl and add satsumas , apple , and zest of lemon .
Assembly

1Heat oven to 220C/200C fan/gas 7.

2Roll out the pastry to 3mm thick.

3Using a round cutter (about 10cm), cut out 16 bases and place them into muffin trays. Put mincemeat mixture into each. Brush the edge of each pie with a little egg .

4Re-roll out the pastry to cut 7cm lids and press them on top to seal. Glaze with the egg , sprinkle with extra caster sugar , then make a small cut in the tops.

5Bake the mince pies for 15-20 minutes until golden brown. Leave to cool before releasing them from the muffin trays and dusting with a little more icing sugar before serving.
