Preparation

1Coat a cake pan with a light film of fat and line it with a parchment circle .

Replace 27.5 g of the all-purpose flour with @Dutch-process cocoa powder{27.5%g}.

Sift the cocoa powder together with the flour.

Follow the remaining method as stated above.

1Blend the butter with the vanilla extract .

2Combine the eggs , egg yolks , and sugar in a mixer bowl . Set over a pan of barely simmering water and whisk constantly until the sugar dissolves and the mixture reaches 43°C.

3Transfer to the mixer and whip on high speed with the whip attachment until the foam reaches maximum volume. Reduce the speed to medium and mix for 15 minutes to stabilize the mixture.

4Turn off the mixer and fold in the sifted flour . Temper the butter mixture with a small portion of the batter and fold into the larger portion of batter.

5Scale 450 g of batter into the prepared cake pan , filling the pan two-thirds full.

6Bake in the oven at 177°C until the top of the cake springs back when lightly touched, about 30 minutes .

7Cool the cake in the pan for 5 minutes , then unmold onto a sheet pan lined with parchment paper that is dusted with confectioners' sugar to cool completely.
