- Monterey Jack cheese ½ cup

1Sauté finely chopped onion and finely chopped jalapeño or serrano pepper in a pan with butter (or oil) until softened.

2Whisk large eggs with a pinch of salt and black pepper in a bowl .

3Add the egg mixture to the pan and cook over medium-low heat, stirring gently.

4When the eggs are about half cooked, fold in crumbled tortilla chips and seeded and diced roma tomato .

5Stir in shredded Monterey Jack cheese until melted.

6Top with fresh cilantro and serve immediately with your favorite salsa .
