Tex-Mex Migas

  • onion ½
  • jalapeño or serrano pepper 1
  • butter 2 tbsp
  • large eggs 6
  • salt
  • black pepper
  • tortilla chips 1 cup
  • roma tomato 1
  • Monterey Jack cheese ½ cup
  • cilantro
  • salsa

    Sauté finely chopped onion and finely chopped jalapeño or serrano pepper in a pan with butter (or oil) until softened.

    Whisk large eggs with a pinch of salt and black pepper in a bowl .

    Add the egg mixture to the pan and cook over medium-low heat, stirring gently.
  4. 4
    When the eggs are about half cooked, fold in crumbled tortilla chips and seeded and diced roma tomato .
  5. 5
    Stir in shredded Monterey Jack cheese until melted.
  6. 6
    Top with fresh cilantro and serve immediately with your favorite salsa .
