- freshly ground black pepper some
- thyme sprigs some

1Preheat the oven to 250Β°F. Line a large baking sheet with parchment paper.

2Place the halved cherry tomatoes cut side up on the baking sheet.

3Drizzle with extra-virgin olive oil and sprinkle with sea salt , freshly ground black pepper , and fresh thyme sprigs (optional).

4Roast the tomatoes for 2 Β½ hours to 3 hours until they are well shriveled around the edges.
