🥘 Ingredients
- olive oil 2 Tbsp
- vegan sausage (13 oz) 1 pkg
- Cajun seasoning 1 Tbsp
- olive oil 1 Tbsp
- yellow onion 1 large
- green bell pepper 1
- red bell pepper 1
- celery 3 stalks
- garlic 6 cloves
- Cajun seasoning 1 Tbsp
- salt 1 tsp
- cayenne pepper ¼ tsp
- dried thyme 1 tsp
- crushed tomatoes 14 oz
- vegan Worcestershire sauce 2 tsp
- long grain white rice 1 ½ cups
- water 2 ¾ cups
- okra 1 cup
- Cajun seasoning 1 Tbsp
- salt
- fresh parsley
- green onions

1In a large pot or pan, add olive oil (divided) and warm over medium-high heat. Add sliced vegan sausage (13 oz) (Field Roast Italian or similar) and Cajun seasoning (divided) and sauté for 3 minutes to 4 minutes , until browned and warm. Transfer to a clean plate and set aside.

2To the same pot , add the remaining olive oil and chopped yellow onion , diced green bell pepper , diced red bell pepper , and chopped celery . Sauté for 5 minutes to 7 minutes , stirring frequently.

3Add minced garlic , another Cajun seasoning , salt (omit if your Cajun seasoning contains salt), cayenne pepper (optional), and dried thyme . Stir and cook for 1 minute .

4Add crushed tomatoes (1 can), vegan Worcestershire sauce , uncooked long grain white rice , and water to the pot. Stir well, bring to a boil, then lower the heat to a simmer (covered) and cook for 25 minutes to 30 minutes , until the rice is cooked. Stir every 5 minutes to make sure the rice doesn't burn and stick to the bottom of the pot. Add a little more water as needed if the mixture starts to dry out.

5Stir in thinly sliced okra (optional). Add the cooked sausage back to the pot and mix well. Taste and season with another Cajun seasoning (optional) and additional salt and pepper to taste. Remove from heat.

6Serve sprinkled with chopped fresh parsley and green onions and enjoy!
